The Finca covers 247 acres of cloud forest at 4000 ft above sea level. Approximately 20% of the land is dedicated for the tourism buildings which includes the central lodge, main cabins, volunteer cabins, roads, and trails; 20% is planted with shade-grown coffee, vegetables and fruit trees, and the remaining 60% of the property is a dense wet tropical primary and secondary forest and former cow pastures now being reforested.
Coffee growing is part of the culture of the northern territories of Nicaragua. FEV cultivates arabica coffee in several varietals: Parainema, Ethiosar, Caturra, and Java to mention a few. We aim to produce the best quality coffee and at the same time to protect and conserve the ecosystem of the entire farm by following strict regenerative agricultural practices. Visitors and guests can learn about these practices and our organic coffee farming techniques from seed to cup by reserving the Coffee Tour activity at FEV. Once a year, we pick, pulp, ferment, and wash our coffee during the harvest season (December - February) then dry the beans in our raised beds for a few days before transporting the bags to the dry mill in Matagalpa for the final processing.
While you're here, you can also take a little tour of our organic vegetable garden to see where our most delectable veggies and fruits are harvested for the meals we serve. Miguel, our head gardener, will explain our farming methods and the variety of kales, squashes, lettuces, beets and radishes we have grown, as well as the oranges, lemons, and passionfruit in our small orchard.
